Homemade Egg Noodles

 
 

3 egg yolks

1 whole egg
3 T. cold water
2 C. flour (approx.)

Beat eggs slightly, add water, add flour to make a stiff dough.  Turn out on floured board, knead 3 - 5 minutes.

Divide into 3 parts and roll each into a paper thin sheet.  Place on large cloth on a table to dry slightly about 1 hour.

Then roll up dough like jelly roll, cut crosswise in about 1/8 " strips or desired thickness.

Makes 6 C. noodles.  This is Elsa's grandmothers recipe.
